Have you ever gone to a restaurant and find yourself eating all the bread in the basket before your meal and before you know it you're six months preggo with a bread baby? No? Just me.
Well, my body hates bread but my heart loves it. It fills my soul. Bread doesn't judge. But at some point the love affair has to dwindle if you want to fit in your shorts this summer....or DOES IT?!
Thanks to this crappy candida cleanse I've been doing, I have found a way to make my bread and eat ALL of it too! Enter: coconut bread. Made with coconut and buckwheat flour, you can enjoy this bread the way you want to: YOLO style.
**BEWARE: if you DO have candida, eating too much of this bread can cause MASSIVE die off and it is NOT fun. As I found out after I ate half a loaf of this bread and died for two days afterwards. What I suggest is taking a taste of a slice or two and thats it for the first time and then the next day eat it again and see how your body likes it. I'm up to 2-3 pieces a day now without die off*
Enough jabber, let's get to it:
**I made a shopping list for you on AMAZON so that you can get all the ingredients (minus eggs) ASAP!**
1/2 cup buckwheat flour
1/2 cup coconut flour
1/2 cup coconut milk
1 tbsp coconut oil melted
1/2 tsp stevia
Preheat oven to 350
In a food processor, blend eggs ,coconut oil and stevia together
Add the coconut flour, coconut milk, buckwheat, and baking powder. Whisk until there's not clumps
Spoon into greased pan and bake for 30 min (I like to add seeds such as poppy, sesame or Everything But Bagel to the top of the bread!)
Remove and cool. Store in fridge up to one week
ENOJY this with avocado or ghee topped with it!
