You know I love me some Mexican Monday, but all day every day. This was such a quick yummy meal and totally satisfied my Chipotle craving.
Just take a few mini sweet peppers, cut the top off and hollow them out.
Grill each side for 5 min and set aside.
Cook half a cup of brown rice and half a cup of black beans
Add spices like cumin, coriander, and smoked paprika.
Stuff the little boogers with as much as each pepper can hold
Top with 1/4 avocado. Voila!!!
