Mung Burrito

Mexican Food Monday is in full swing. Oh my G. So YUMMY. So these are Mung Burritos (recipe from the book SuperLife). I had never tried mung beans before but they were dee-lish.

2 food for life small corn tortillas

2tbsp mung beans

1/4 bell pepper

1/4 yellow onion

1 tbsp hummus

1 tbsp pico de gallo

1/4 avocado

Hand full of kale

Cook the veggies and beans. spread the hummus on one tortilla then sandwich the other on top or fold into a burrito!
