The egg roll saga continues! Try these delicious egg rolls full of foods friendly for when you're on your period.
Ingredients:
Egg rolls-
1/2 yellow onion
3/4 cup mushrooms chopped*
3/4 cup wild rice cooked*
1/2 cup cabbage chopped
1/2 cup kidney beans*
2 green onions chopped
1/2 avocado diced
2-3 tbsp coconut aminos
Olive oil
Miso dipping sauce:
* 1 cup mayonnaise
* 2 tablespoons miso paste*
* 1 tablespoon grated fresh ginger*
* 1 teaspoon minced garlic
* 1 tbsp rice wine vinegar
* 2 tbsp lime juice
1. Prepare wild rice according to instructions
2. Sauté onion, cabbage and mushrooms in pan for 5-7 min
3. Add wild rice and coconut aminos. Sauté for 3 min
4. Add in beans and green onion and mix for 3 min. Turn off heat and let pan and mixture cool off
5. In the meantime mix all ingredients for miso dipping sauce. Adjust for flavor as needed
6. Chop up avocado.
7. Roll up 8-10 egg rolls by putting small spoonful of mixture and little bit of avocado in each wrap, then fold in sides and roll like a burrito. Feel free to use extra mixture too a future meal
8. Heat up clean skillet on high heat with a generous amount of olive oil (enough to cover the bottom of the pan)
9. Add in egg rolls and sauté 1-3 min or until each side is crispy brown. Rotate as many times as needed
10. Enjoy with dipping sauce!
*= foods are great to eat during your period!
