Soups are perfect for the Luteal phase of your cycle, right before your period! You need 100-300 more calories during this phase because your metabolism is revved up. Throwing in root veggie soups such as the simple one below is a great way to get slow burnings carbs into your rotation.
Ingredients:
-1 large, cooked, butternut squash (peel off skin)
-1.5 tbsp of chopped ginger
-1 yellow onion diced
-1 tbsp coconut oil
-2 cups of vegetable stock
-1 can of coconut milk
-1.5 tbsp of turmeric
-1 tbsp slivered almonds or pumpkin seeds as topping
Instructions:
-Saute ginger and onion in a tiny bit of olive oil in pan for 3-5 min
-In separate pot combine stock, cooked squash, onion and ginger, coconut milk, and turmeric.
-Use an immersion blender to blend or use Vitamix or food processor in smaller batches
-Reheat if needed and top with desired toppings
