I am in love with quinoa salads this summer! So many options and different ways to get protein, vitamins and nutrients and feel like you aren't missing out on the cliche "pasta salad". I keep it simple so here it is (make a big batch so that you can use all week):
-Quinoa
-Kale
-Shredded carrot
-Corn
-Pinto beans
-Broccoli sprouts
-Red onion
-Olive oil
-Red wine vinegar
-Himalayan pink salt to taste
Let it marinate over night and BOOM! You're set for lunch all week!
